INGREDIENTS

For the Teriyaki Sauce:
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons maple syrup or agave syrup
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch
  • 1/4 cup water
For the Stir-Fry:
  • 2 cups cooked rice (white or brown)
  • 1 tablespoon vegetable oil
  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 1 bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1/2 cup snow peas, trimmed
  • 1/4 cup sliced green onions (scallions), for garnish
  • Sesame seeds, for garnish (optional)

INSTRUCTIONS

For the Teriyaki Sauce:

  1. In a small bowl, whisk together the soy sauce, maple syrup, minced garlic, grated ginger, cornstarch, and water until well combined. Set aside.
For the Stir-Fry:
  1. In a large non-stick skillet or wok, heat the vegetable oil over medium-high heat.
  2. Add the cubed tofu to the skillet in a single layer. Cook for 5-7 minutes, flipping occasionally, until the tofu is golden brown and crispy on all sides. Remove tofu from the skillet and set aside.
  3. In the same skillet, add a bit more oil if needed. Add the bell pepper, broccoli florets, julienned carrot, and snow peas. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  4. Return the cooked tofu to the skillet with the vegetables.
  5. Pour the teriyaki sauce over the tofu and vegetables. Stir well to coat everything evenly.
  6. Add the cooked rice to the skillet. Stir-fry for another 2-3 minutes, allowing the rice to heat through and absorb the flavors of the sauce.
  7. Remove from heat and garnish with sliced green onions and sesame seeds, if desired.
  8. Serve the vegan teriyaki rice stir-fry hot, and enjoy this delicious and wholesome meal packed with flavor and plant-based goodness!
