INGREDIENTS

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 bell pepper (any color), diced
  • 1 zucchini, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups baby spinach or kale
  • Fresh parsley, chopped (for garnish)

INSTRUCTIONS

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion for 3-4 minutes until translucent. Add garlic and cook for 1 minute.
  3. Add carrots, celery, bell pepper, and zucchini. Cook for 5 minutes until slightly softened.
  4. Pour in diced tomatoes, vegetable broth, thyme, oregano, smoked paprika, salt, and pepper. Mix well.
  5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 15-20 minutes.
  6. Stir in baby spinach or kale, and cook for 2-3 minutes until wilted.
  7. Remove from heat, let it rest for a few minutes, then ladle into bowls.
  8. Garnish with fresh parsley and serve hot.
