INGREDIENTS
For the Wontons:
- 1 cup finely chopped mushrooms (shiitake or button mushrooms)
- 1/2 cup finely chopped cabbage
- 1/4 cup finely chopped carrots
- 2 cloves garlic, minced
- 1 tablespoon soy sauce or tamari
- 1 teaspoon sesame oil
- 1/2 teaspoon grated ginger
- 24 vegan wonton wrappers
For the Soup:
- 6 cups vegetable broth
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 green onions, thinly sliced
- 2 cups baby spinach or bok choy leaves
- 1 tablespoon soy sauce or tamari
- 1 teaspoon rice vinegar
- Salt and pepper to taste
INSTRUCTIONS
- In a mixing bowl, combine finely chopped mushrooms, cabbage, carrots, garlic, soy sauce or tamari, sesame oil, and grated ginger. Mix until well combined.
- Place a small spoonful of the filling in the center of a wonton wrapper. Moisten the edges of the wrapper with water, then fold it over the filling to create a triangle shape. Press the edges to seal tightly. Repeat with the remaining filling and wrappers.
- In a large pot, bring vegetable broth to a simmer over medium heat. Add minced garlic and grated ginger, and let it cook for about 2 minutes.
- Carefully drop the wontons into the simmering broth and cook for about 5-7 minutes, or until they are tender and cooked through.
- Add thinly sliced green onions, baby spinach or bok choy leaves, soy sauce or tamari, and rice vinegar to the pot. Stir gently to combine.
- Let the soup simmer for another 2-3 minutes, until the greens are wilted.
- Taste the soup and adjust seasoning with salt and pepper if needed.
