INGREDIENTS

For the Wontons:
  • 1 cup finely chopped mushrooms (shiitake or button mushrooms)
  • 1/2 cup finely chopped cabbage
  • 1/4 cup finely chopped carrots
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon sesame oil
  • 1/2 teaspoon grated ginger
  • 24 vegan wonton wrappers
For the Soup:
  • 6 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 green onions, thinly sliced
  • 2 cups baby spinach or bok choy leaves
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon rice vinegar
  • Salt and pepper to taste

INSTRUCTIONS

  1. In a mixing bowl, combine finely chopped mushrooms, cabbage, carrots, garlic, soy sauce or tamari, sesame oil, and grated ginger. Mix until well combined.
  2. Place a small spoonful of the filling in the center of a wonton wrapper. Moisten the edges of the wrapper with water, then fold it over the filling to create a triangle shape. Press the edges to seal tightly. Repeat with the remaining filling and wrappers.
  3. In a large pot, bring vegetable broth to a simmer over medium heat. Add minced garlic and grated ginger, and let it cook for about 2 minutes.
  4. Carefully drop the wontons into the simmering broth and cook for about 5-7 minutes, or until they are tender and cooked through.
  5. Add thinly sliced green onions, baby spinach or bok choy leaves, soy sauce or tamari, and rice vinegar to the pot. Stir gently to combine.
  6. Let the soup simmer for another 2-3 minutes, until the greens are wilted.
  7. Taste the soup and adjust seasoning with salt and pepper if needed.
  8. Ladle the Vegan Wonton Soup into serving bowls and serve hot.
