INGREDIENTS

  • 1 cup mixed vegetables (such as bell peppers, broccoli, carrots, snap peas, mushrooms, etc.), sliced or chopped
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • ¼ cup teriyaki sauce (store-bought or homemade)
  • Cooked rice or noodles for serving

INSTRUCTIONS

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and grated ginger to the skillet and sauté for about 1 minute until fragrant.
  3. Add the mixed vegetables to the skillet and stir-fry for 3-4 minutes until they are tender-crisp.
  4. Pour the teriyaki sauce over the vegetables and continue to stir-fry for another 2-3 minutes until the sauce thickens slightly and coats the vegetables evenly.
  5. Remove the skillet from the heat and serve the Veggie Teriyaki Stir-Fry hot over cooked rice or noodles.
  6. Garnish with sesame seeds or chopped green onions if desired.
