🌱✨ Elevate your salad game with our Vibrant Vegan Quinoa Salad! Packed with colorful veggies, protein-rich quinoa, and zesty dressing, it’s a wholesome and delicious addition to any plant-based meal. Get ready to delight your taste buds with this nutritious and flavorful recipe! 🥗😋

INGREDIENTS

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers (red, yellow, or orange), diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley or cilantro, chopped
  • Juice of 1-2 lemons
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional toppings: avocado slices, toasted nuts or seeds, crumbled tofu or tempeh, dried cranberries or raisins

INSTRUCTIONS

  1. In a medium saucepan, combine the quinoa and water or vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let it cool slightly.
  2. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell peppers, red onion, and fresh parsley or cilantro.
  3. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper to make the dressing.
  4. Pour the dressing over the quinoa salad and toss until everything is well coated.
  5. Taste and adjust seasoning if needed.
  6. If desired, add optional toppings such as avocado slices, toasted nuts or seeds, crumbled tofu or tempeh, or dried cranberries or raisins.
  7. Serve the Vibrant Vegan Quinoa Salad chilled or at room temperature.
