INGREDIENTS
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced

- 1/4 cup fresh parsley or cilantro, chopped
- Juice of 1-2 lemons
- 2 tablespoons olive oil

INSTRUCTIONS
