Spice up your Taco Tuesday with this savory and protein-packed Walnut Taco Vegan Meat – a delicious plant-based twist on a classic favorite!

INGREDIENTS

  • 2 cups walnuts
  • 1 red onion
  • 4 cloves garlic
  • 1/4 cup sun dried tomatoes in oil (*See post if avoiding oil)
  • 1 tbsp avocado (or olive) oil
  • 1 tbsp taco seasoning
  • 2 tsp soy sauce (*See post for soy free options)
  • 1 juice of a lime

Directions:

  1. Spend at least 30 minutes soaking walnuts in a dish of water. *For advice on preparing in advance, see post
  2. Walnuts should be drained. When you have crumbles that resemble meat, add them to a food processor and pulse. *Avoid overprocessing to avoid creating walnut butter.
  3. Finely chop the sun-dried tomatoes, onions, and garlic.
  4. Your onions should be sauteed in oil until they are transparent (about 2-3 minutes). One minute after adding the garlic.
  5. Stir to blend after sprinkling the taco seasoning on top. the sun-dried tomatoes. Add the walnut crumbles and stir thoroughly. Cook for 1 more minute.
  6. Add lime juice and soy sauce (or a substitute). Stir thoroughly. Cook for an additional 4-5 minutes. Turn off the stove and then serve.
