INGREDIENTS

  • 1 bunch organic winter chard, washed and chopped
  • 2 oranges, peeled and segmented
  • 1/2 cup sliced almonds, toasted
  • 1 apple, thinly sliced
  • 1/4 cup fresh parsley leaves
  • 1/4 cup fresh mint leaves
  • 1/4 cup dried cranberries or cherries
  • Salt and pepper to taste
Citrus Dressing:
  • Juice of 1 orange
  • Zest of 1 orange
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey or maple syrup (optional)
  • Salt and pepper to taste

INSTRUCTIONS

  1. Prepare Dressing: In a small bowl, whisk together the orange juice, orange zest, olive oil, apple cider vinegar, honey or maple syrup (if using), salt, and pepper. Set aside.
  2. Assemble Salad: In a large salad bowl, combine the chopped winter chard, orange segments, toasted almonds, sliced apple, parsley leaves, mint leaves, and dried cranberries or cherries.
  3. Drizzle Dressing: Pour the citrus dressing over the salad ingredients.
  4. Toss Well: Gently toss the salad until everything is evenly coated with the dressing.
  5. Season: Season with salt and pepper to taste.
  6. Serve: Transfer the salad to serving plates or bowls.
