INGREDIENTS

  • 1 cup almond milk (+2 extra tbsp)
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • ÂĽ tsp cardamom, ground
  • ÂĽ tsp salt
  • 4 tbsp chia seeds
  • ½ cup blackberries (cut in halves)
  • â…“ cup natural yogurt (or Greek yogurt)
  • 1 nectarine/apricot (pitted and sliced)
  • 2 tbsp almonds (chopped)

DIRECTIONS

  1. Almond milk, maple syrup, vanilla essence, ground cardamom, and salt are heated in a small pot over medium heat. Remove the heat after the liquid reaches a boil. Remark: In a hurry? Don’t bother cooking. It also works.
  2. Add the chia seed and almond milk mixture to a medium bowl. Stir continuously until all of the seeds are evenly in contact with the liquid. For 12 hours or overnight, cover and rest in the refrigerator.
  3. Top yogurt, almonds, blackberries, and nectarine slices with chia pudding before serving.
