INGREDIENTS
- 8 oz. pasta cooked
- 1 tablespoon olive oil
- 1 cup yellow onion diced
- 8 oz. bella mushrooms sliced
- 3 garlic cloves minced
- ½ teaspoon salt plus more to taste
- 1 tablespoon all purpose flour
- 1 cup coconut milk
- 1 cup vegetable stock
- fresh parsley for garnish chopped
DIRECTIONS
- First put the pasta on to cook as directed on the packet.
- Add the coconut milk and vegetable stock, add the all-purpose flour and saute the mushrooms, crushed garlic and onions for about a minute.
- Whisk until well-combined, then stir continuously while it simmers.
- Then put in salt and pepper to taste and toss the cooked pasta.
- Lastly served with fresh parsley.
