INGREDIENTS

For the Meatballs:
  • 1 cup cooked lentils, drained and rinsed
  • 1 cup cooked quinoa
  • 1/2 cup breadcrumbs (or almond flour for gluten-free option)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons nutritional yeast
  • 1 tablespoon tomato paste
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)

INSTRUCTIONS

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper.
  2. In a large mixing bowl, combine the cooked lentils, cooked quinoa, breadcrumbs (or almond flour), chopped onion, minced garlic, nutritional yeast, tomato paste, soy sauce, dried oregano, dried basil, smoked paprika, salt, and pepper. Mix well until all ingredients are evenly combined.
  3. Using your hands, shape the mixture into small meatballs, about 1 inch in diameter. Place the formed meatballs onto the prepared baking sheet.
  4. Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the meatballs in batches, making sure not to overcrowd the skillet. Cook the meatballs for about 2-3 minutes on each side, or until they are golden brown and crispy.
  5. Transfer the browned meatballs to the prepared baking sheet.
  6. Bake the meatballs in the preheated oven for 15-20 minutes, or until they are firm and cooked through.
  7. Once cooked, remove the meatballs from the oven and let them cool slightly before serving.
  8. Serve the flavorful plant-based meatballs hot with your favorite sauce, pasta, or as a protein-packed addition to salads and bowls.
