Get ready to spice up your weeknights with this comforting and flavorful Indian Vegetable Curry!

INGREDIENTS

  • 1 onion
  • 300ml water
  • 2 garlic cloves
  • 3 celery stalks
  • 1 apple
  • 100g potatoes
  • 100g carrots, sliced
  • 200g cauliflower florets
  • 1 tsp extra virgin olive oil
  • 1 tsp chili powder
  • 1 tsp ground ginger
  • 1 tsp turmeric
  • 100g green beans
  • 1 tsp tomato puree
  • 20g sultanas
  • ÂĽ tsp salt

DIRECTIONS

  1. Onions, garlic, celery, apples, potatoes, carrots, and cauliflower are peeled, chopped, and divided into florets.
  2. For five minutes, stir-fry apple, celery, onion, and garlic in hot oil in a big pan.
  3.  Stir-fry the mixture gently for another minute after adding the chili, ginger, and turmeric.
  4. Potatoes, carrots, cauliflower, and green beans should also be added, along with 300 cc of water. Add salt and sultanas, then stir in tomato puree.
  5. Bring to a boil, lower the heat, cover, and simmer for 35–40 minutes.Until you’re ready to serve, savor the aroma!
