INGREDIENTS
- 1 block (14 ounces) firm tofu, drained and crumbled
- 1 large cucumber, grated and squeezed to remove excess liquid
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh mint
- Salt and black pepper, to taste
DIRECTIONS
- Crumble the tofu and place in a bowl.
- Grate the cucumber and squeeze out the excess liquid. Add to the bowl with the tofu.
