INGREDIENTS

  • 1 block (14 ounces) firm tofu, drained and crumbled
  • 1 large cucumber, grated and squeezed to remove excess liquid
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh mint
  • Salt and black pepper, to taste

DIRECTIONS

  1. Crumble the tofu and place in a bowl.
  2. Grate the cucumber and squeeze out the excess liquid. Add to the bowl with the tofu.
  3. Add the lemon juice, olive oil, minced garlic, chopped dill, and chopped mint to the bowl.
  4. Season with salt and black pepper to taste.
  5. Mix everything together until well combined.
  6. Cover and refrigerate for at least 1 hour, or overnight, to allow the flavors to develop.
  7. Serve chilled as a dip, spread, or sauce. Enjoy!
